Pumpkin Chocolate Chip Cookies
1 cup of canned pumpkin
1 cup of white sugar
1/2 cup of vegetable oil
1 egg
2 cups of all-purpose flour
2 teaspoons of baking powder
2 teaspoons of ground cinnamon
1/2 teaspoon of salt
1 teaspoon of baking soda
1 teaspoon of milk
1 tablespoon of vanilla
2 cups of semisweet chocolate chips
Directions:
In a large bowl, combine pumpkin, sugar, vegetable oil, vanilla and egg. Then dissolve the baking soda with the milk and mix well. In a seperate bowl combine flour, baking powder, ground cinnamon and salt. Little by little, add dry mixture to the pumpkin mixture and mix well. Fold in the chocolate chips. Using a teaspoon, drop a spoonful onto a greased cookie sheet and bake 10-12 minutes or until golden brown at 350 degrees.

I have to try these. I ordered a pumpkin spice coffee from Gevalia a couple of months ago and it is delish. These cookies would be perfect for the Autumn.
