SMOKED SALMON ~ CREAM CHEESE APPETIZER
This a a wonderfully easy recipe to assemble for all those "dish to pass" summertime picnics and patio parties you'll attend this summer. It's "out of the ordinary". Watch that plate empty in lightening speed!!
8 ounces of room temperature low fat cream cheese (Neufchatel)
1/4 cup of mayonnaise
2 green onion (tops only) diced
1 tablespoon of freshly squeezed lemon juice
2 tablespoons of chopped fresh parsley
Stir all the above ingredients to blend. Then gently add 4 ounces of smoked salmon (diced)
One long French baguette, sliced long ways, but not all the way through. Leave a hinge to open and close the loaf.
With your fingers, scoop out the soft center of the bottom half. With a spoon, fill the loaf with the cream cheese/salmon mixture.
Close up the loaf. Wrap in Saran and refrigerate a couple hours or overnight.
Unwrap and slice carefully into slices and mound attractively onto a serving plate. And off to the party you go.
